Prep time: 10 minutes. Cook Time: 45 minutes
Step One: Preheat your oven to 350 degrees & In liquid measuring cup:
500ml of your favourite unsweetened nut milk (soy, almond, hemp, whatever)
The Juice from one fresh squeezed lemon.
Set this aside at room temperature while you mix the rest of the ingredients
Step Two: In a large bowl:
2.5 cups of Whole Wheat Flour
1/2 a cup of Red River Cereal
1/4 cup of sugar (I used organic brown sugar)
1 tsp salt
2 tsp of baking soda
Mix everything together
Step Three: Add the nut milk to the dry ingredients and mix with a spoon until combined. Take a bread pan (I used a cast iron one) and coat with cooking spray, or wipe edges with coconut oil with a paper towel or place parchment paper in the pan whatever your preference. Add batter to the pan, you can fill right up to the top as it won't rise much. Once your oven is warm (350 degrees) toss it in there and set your timer for 45 minutes. Once the time is up test it with a toothpick to make sure no batter comes off (toothpick should come out dry) and then let cool before taking the loaf out of the pan.
