That all aside I was recently in my local health food store picking up some buckwheat flour and saw for the first time the VeganEgg product. It looked like a mini four-egg carton and I was intrigued. I've never really missed eggs. I recall my favourite were poached or in the form of scrambled on toast with ketchup. Since you can't do a poached egg with the VeganEgg product I thought I'd try replicating my old sandwich favourite. You can watch the cooking in the video below if you like.
My daughter and I decided we liked them but wouldn't rush to buy them again. Maybe if they were on sale. In particular she thought they might be good when camping for that traditional camping breakfast. It amazes me how close some of these foods are getting to the real thing. The Beyond Meat burger that I tried a month ago or so blew my mind in it's similarity to meat. I can see a time when animal sourced products simply become irrelevant. That can only be a good thing for our environment and animal welfare.
